MEDITERRANEAN PENNE PASTA

Ingredients

6 small or 2 medium sized Italian sausages
2 Tbsp. olive oil
1 small white or yellow onion, diced
1 small red pepper, julienned or diced
1 Tbsp. Oh! So Garlic
1 jar (550 mL) pasta sauce
Black pepper (to taste)
2 Tbsp. capers, drained (optional)
1/2 cup sliced black olives or 8-10 whole pitted olives (optional)
1 Tbsp. Mediterranean Greek Seasoning Blend
3 cups uncooked Penne pasta (or you can sub with spaghetti)
Parmesan cheese, freshly grated

Instructions

In a skillet over medium heat, cook sausages until browned and cooked through. When sausages are cooled, slice into 1/2" pieces; set aside. In a large skillet, heat olive oil, then add onion, red pepper and Oh! So Garlic; cook until onion is translucent and pepper is al dente. When onion and pepper are cooked add pasta sauce, black pepper, capers, olives and Mediterranean Greek Seasoning Blend; simmer on low. While sauce is simmering cook pasta according to package directions. When pasta is cooked, drain and toss with sauce. Place in a serving bowl or individual pasta dishes and top with freshly grated Parmesan cheese.
